Can I change/add the language of the emails sent to customers?

Yes. You can add new languages for emails you send by going to Configuration → email → content and by clicking on Add, you will be able to select a language from the list so that Octobat can link it to the country of the buyer when sending the email. Proceed by writing the wanted content in the selected language.
